The training manual has a brief historical certificate of alcoholic production, information on the state and prospects of the development of the domestic industry of alcoholic beverages, information about consumer value is given and the general commodity characteristics of the industry products were given, the raw materials and technological schemes for the production of individual groups of strong alcoholic beverages in all of them were considered in sufficient detail. Diversity, as well as alcoholic mixed drinks and cocktails, provides requirements for product quality indicators and the factors forming it are considered. Separate sections of the books are devoted to microbiology, sanitation and hygiene, ways to increase production efficiency, as well as safety precautions and labor hygiene at the alcohol industry enterprises. The textbook is intended primarily for the preparation of bachelors in the direction of “Technology for the production and processing of agricultural products”, but can be used by students in the areas of “food from plant raw materials” and “Standardization and metrology”. The publication also is of interest to graduate students, employees of the Research Institute, organizations and enterprises of the agricultural sector, owners of enterprises of the industry of various forms of ownership
