The monograph presents the simplest and most widely used methods for determining the most important plant antioxidants: vitamin C, polyphenols, carotenoids, capsaicins, photosynthetic and betalain pigments, flavonoids, anthocyans, alkaloids, tannins, as well as antioxidant microelements: selenium and iodine. Particular attention is paid to the methods of extraction of antioxidants that provide maximum extraction of antioxidants from plant materials, as well as the correct choice of the most suitable method for analyzing one or another component. Detailed information of the method of using thin -layer chromatography developed by the authors to evaluate the carotenoid composition of tomatoes and peppers.
The data presented include the results of the authors" own studies conducted on the basis of the FNFO, as well as the latest developments of foreign scientists devoted to natural antioxidants and methods for determining them. The methods given in this monograph were successfully tested in the laboratory and analytical department of the FNFO in 2012-2018.
