Physical and colloidal chemistry. Textbook for SPO

The textbook consists of two parts. The first part sets out the basics of physical chemistry: the doctrine of the aggregate state of matter, chemical thermodynamics, chemical and phase equilibrium, chemical kinetics and catalysis, photochemistry, thermodynamic properties of electrolyte and non -electrolyte solutions, electrical conductivity of electrolytes solutions, electrochemical processes. In the second part, superficial phenomena and properties of various dispersed systems are considered. From modern scientific positions, the classification of dispersed systems, the properties of colloidal solutions, surface-active substances and high molecular weight compounds are outlined. Theoretical material is illustrated by examples of use in food technology.
