The textbook provides the main requirements for organizing the nutrition of children and adolescents, taking into account modern achievements in nutrition science, directions of scientific and technological progress, and regulatory framework. Special attention is paid to the nutrition of children and adolescents with alimentary-dependent diseases, organizing the work of food units in educational institutions, issues of production control, and the implementation of the HACCP system in catering enterprises at educational institutions, organizing work on shaping a culture of healthy eating in children. The textbook is intended for students of higher educational institutions studying in the field of "Food Production Technology and Public Catering Organization" when studying disciplines such as "Sanitation and Hygiene of Nutrition," "Organization of Production and Service in Public Catering Enterprises," and other related disciplines, in the completion of coursework and final qualification works, as well as for students of medical-preventive faculties of medical universities studying the discipline "Nutrition Hygiene." The manual is of interest to practical workers involved in organizing the nutrition of children and adolescents, for employees of educational institutions and Rospotrebnadzor (Russian Federal Service for Surveillance on Consumer Rights Protection and Human Wellbeing) who oversee the work of food units.
