The training manual outlines theoretical foundations and disclose the features of the course of biotechnological processes in the production of food products from plant raw materials. The manual presents the biochemical composition of the main plant material used in the food and processing industry. Technological schemes for its processing are given. The processes occurring during the bio -conversion of raw materials are described under the influence of enzymes. Various types of microorganisms used in fermentation industries are represented, and methods of their cultivation. The requirements of regulatory and technical documentation presented to raw materials and finished products obtained by biotechnological methods are considered in detail.
