In the monograph, various aspects of the use of milk as a food product are so widely considered so widely. The composition of cow"s milk and milk of various types of agricultural animals is described in detail. The characteristic of dairy products is given. The features of their use are given in various periods of human life, including in infants. Materials on milk intolerance due to deficiency of the enzyme lactase (hypolactasia) in newborns and adults are presented. Separately, a description of the prevalence of hypolactasis among Finno-Ugric peoples is given. Terminology, classification, epidemiology, clinic, diagnosis, treatment and methods of study of hypolactasia are presented. The issues of hypolactasis are considered as part of the problem of dysaccharidase insufficiency (intestinal enzymopathies), which leads to the occurrence of malaborization syndrome. Allergies are given to milk proteins.
