The authors, using publications of research and foreign experts in the field of veterinary sanitation and the practical experience of specialists in veterinary and sanitary examination, as well as their own experience in this field, presented generalized data on veterinary and sanitary requirements for the workpiece, transportation, pre-aligned veterinary inspection of animals, and the procedure for conducting veterinary and sanitary examination of slaughter products (meat and meat products) at Boenic enterprises, issues of veterinary and sanitary examination and evaluation of meat and other slaughter products in infectious, invasive and non-neopoic diseases of slaughter animals (cattle, pigs, sheep, horses) Poultry, rabbits, nutria, wild animals and feathers of game, illuminated the issues of identifying animals and animal products, species of meat, methods and determining falsification of meat, gave proposals for expertise of meat during poisoning and radiation lesions. Information is presented on laboratory methods of research of meat, including with trichinellia and monitoring the use of animal growth stimulants, on the introduction of the HASSP system. The monograph provides data on thermal resistance and inactivation of pathogens of infectious diseases of animals. In addition, recommendations are given on the procedure for processing meat to be disinfected or disposal.
