The training manual presents the requirements of the current regulatory and technical documentation for indicators of the quality and safety of milk, the methods of conducting veterinary and sanitary examination, the methodology for analyzing the composition and quality of milk according to organoleptic, physico-chemical, and sanitary and hygienic indicators are described in detail.
