The textbook presents the requirements of the current regulatory and technical documentation for indicators of the quality and safety of milk and dairy products, the methods of conducting veterinary and sanitary examination, the method of analysis of the composition and quality of milk and dairy products according to organoleptic, physico-chemical, sanitary and hygienic indicators are described in detail.
