The training manual presents the requirements of the current NTD for indicators of the quality and safety of milk, the methods of conducting veterinary and sanitary examination, the methodology for analyzing the composition and quality of milk according to organoleptic, physico-chemical, sanitary and hygienic indicators are described in detail. Ultrasonic methods of research of the chemical composition, as well as instrumental methods for studying the sanitary-hygienic state of milk, are given.
