The book “A gift to young housewives or a means to reduce expenses in the household” by Elena Ivanovna Molokhovets, in girlhood - Burman (April 28 (May 10), 1831, Arkhangelsk 1918, Petrograd), is the culinary bestseller of the 19th century. For the first time published in 1861 in Kursk, she withstood more than thirty reprints in the late XIX - early XX centuries and did not lose its relevance today. This unique collection of recipes for Russian cuisine was originally published as a manual that helps young housewives to conduct households. The book contains recipes for a vegetarian and lean table, samples of table setting and dishes and a description of different reserves necessary in the household. A distinctive feature of this book, in comparison with the previous ones, is an accurate, not approximate, indicating the number of ingredients used. Guided by the goal of reducing the costs in the household, the author in all the recipes indicated the exact proportion of all ingredients by 6 people. A graduate of the Smolny Institute for noble girls, Elena Molokhovets sought to help young housewives with a short condition and moderate consumption to have a constantly tasty, healthy and diverse dinner
