The manual contains 4 chapters. The material of the first three forms the theoretical part of the discipline. The first chapter is devoted to issues of static biochemistry. The second - the issues of dynamic biochemistry are disclosed, the third information is given on the private biochemistry of agricultural products: milk, meat, and vegetable oils. The fourth chapter is a workshop in discipline. In the workshop, the most important biochemical methods of studying agricultural raw materials and products are considered, the theoretical foundations of instrumental research methods are described in detail, chemical and physico-chemical mechanisms of processes underlying the given methods are revealed, and logical and simplified formulas for processing research results
