The workshop sets out the main provisions of the technology of non-alcoholic and alcoholic beverages, the methods for calculating the basic equipment of non-alcoholic production, the consumption of raw materials, control and accounting in the production of non-alcoholic and alcoholic beverages, as well as the requirements for the quality of products and the factors forming it are considered. The textbook has its goal to form technological thinking and deepening knowledge that constitutes the theoretical basis for the study of the modern production of non -alcoholic and alcoholic beverages. The manual was prepared in accordance with the modern achievements of science aimed at organizing production and conducting control to ensure high quality and safety of products produced.
A training manual is intended for students of STR, students in the professional areas of training included in the UGP: “Industrial Ecology and Biotechnology”, “Service and Tourism”. The publication is part of the methodological kit “Technology of non -alcoholic and alcoholic beverages” and “Workshop on the technology of non -alcoholic and alcoholic beverages”
