The book shows the possibility of creating an inexpensive and mobile small -sized device for prompt quality control of food products suitable for use both in production and in everyday life. The use of a new class of spectrometers built on the basis of camcorders with black and white PZS Submacers and LEDs emitting in narrow ranges of ultraviolet, visible and infrared spectrum is proposed. At the same time, the experience of spectrosonal aerospace survey is taken as a basis. Modern promising express methods of operational quality control of food products that are developed in the Russian Federation and abroad are described. The concept of the “qualimetry of food media” has been considered and the importance of the qualimetry of food for public health is shown, since poor -quality products are often found on the product market of Russia. The device of the developed video spectrometer has been examined in detail, which contains a television sensor, computers, database, special software, power and control units. A description of the experimental database, experiments performed and the results of processing the data obtained is given.
