The training manual gives the content and tasks of the course, general principles of analysis and calculation of processes and apparatus of food industries and biotechnologies. The issues of applied hydraulics, hydrostatics, hydrodynamics are considered. Theoretical and practical aspects of hydromechanical, heat exchange, mass exchange processes, evaporation processes, drying, and crystallization are given.
