The purpose of the textbook is to describe industrial technologies used at modern domestic enterprises of the meat and dairy industry. The book discusses the main issues of organizing the production of meat and milk, the general technology of meat and dairy products, canned foods, describes the types of secondary raw materials and the main directions of its processing, and resource and energy-saving technologies are given. The impact of zootechnical and veterinary factors on the composition and properties of meat and milk is considered, and vices of meat and dairy products are described. The basics of technological processes of processing of meat and milk are set out - from its delivery and reception to the production of finished products. Illustrations of various types of equipment serving technological processes are given. A description of meat and dairy products is given in accordance with the current regulatory documentation.
