The results of design developments and experimental research are given to create new energy -saving methods and equipment for thermal processing of food products using a directed infrared radiation supply. The analysis of the deficiencies used in the industry of drying and baking equipment was carried out. The proposals are formulated to eliminate these shortcomings by applying directed radiation from infrared mirror lamps. The functional and structural diagrams of the acting model of dryer-stoves with infrared lamp heaters have been developed, and the elements of its design are designed on the basis of heat transfer laws. A comparative analysis of the effectiveness of tube emitters and the tubular thermoelectric heaters are widely used in thermal installations was carried out.
