Cooking sweet dishes and drinks (PM.07)

The materials of the training manual are the educational and methodological complex of the PM.07 module "Preparation of sweet dishes and drinks" by profession of secondary vocational education 19.01.17 "cook, confectioner", which is included in the list of 50 most demanded in the labor market, new and promising professions requiring medium vocational education (TOP-50)
The book gives a classification of cold and hot sweet dishes, the technology of their preparation, types of technological equipment and industrial equipment used in the preparation of dishes are considered, the serving methods and options for designing cold and hot sweet dishes, the conditions and terms of their storage, and also quality requirements.
The Anglo-Russian dictionary, which is an integral part of the educational process in the development of professional activity, is included in the electronic application to the textbook. The dictionary includes a professional orientation terminology dedicated to the preparation of culinary dishes and recipes of Russian and international cuisine. This dictionary can be used in the course of preparing the contestants for the WorldSkills Russia International Professional Championship on competence "Cooking".
