The monograph is devoted to one of the most important components of traditional culture - the nutrition system, for which, on the one hand, the well -known conservatism is characterized by the historically established and naturally determined rules of culture and life and occupations of the population, and on the other hand, this area has always been susceptible to innovations and borrowings . This was reflected in the emergence of historical and cultural areas, which were characterized by the existence of general or similar features of traditional culture, including in relation to the spread of certain dishes, methods of their preparation, etiquette norms associated with behavior at the table, varieties of ritual food, etc. .
The work consistently examines all these and other aspects of the traditional nutrition culture: the organization of the process of cooking and the utensils used, the main food products and methods of cooking, as well as the workpiece of products for the future, table etiquette, drinks, various types of ritual food. Changes in the power system are noted under the influence of transformations of public and family way of life and socio-economic and cultural changes in the second half of the XIX-XX centuries.
