However, the exclusive right to this name belongs to wines from the protected by EU laws territory in the Champagne region. Even the technology by which they are produced cannot be called champagne if applied in another region. At the same time, winemakers in Italy, Spain, Germany, California, South Africa, and even on the island of Tasmania have excelled in creating sparkling wines using this classic method. There are other, more economical ways to produce bubbly wines that are becoming increasingly popular. Sparkling wines remarkably resonate with the aesthetics of our time. It is currently the fastest-growing category in the global wine market. People have stopped perceiving champagne (and its counterparts) only as a festive wine. It turns out that sparkling wines are the most versatile when it comes to food pairings. They go well with everything! Russia is among the top 5 producers and consumers of sparkling wines. These figures are mainly provided by the products of large factories with installations for carbonating wine materials. But we also have good traditions and taste, so we will see more in the future!
