The book discusses the features of the formation, growth and development of berries and their chemical-technological diverse in the clusters of grapes as a consequence of the acropetal nature of the growth of inflorescence and clusters. The features of the deterioration of the quality and damage of the grape bunny when being on the plantation after cleaning, storage in conditions of high and low relative humidity, as well as in the conditions of a controlled atmosphere were studied. Data on the development of epiphytic microflora on grades of grapes during storage depending on the composition of the gas medium. Recommendations are given to improve the technology of cleaning, transportation and storage of grapes.
